  • Use a knife to cut the nutmeg into small pieces.
    Combine the nutmeg with the roughly broken cinnamon, cardamom pods, and cloves in a pan.
    Roast the mixture over medium heat for a couple of minutes until you notice a delightful aroma of roasted spices.

  • Roughly crush the spices using a mortar and pestle. As and alternative, you can also use a food processor.

  • Place the spices and water in a saucepan and bring them to a simmer over medium heat. While heating, grate the peeled ginger into the water.
    Allow the mixture to simmer for around 5 minutes.

  • Add the chamomile tea and continue simmering for another 5 minutes.

  • Then add the milk and let simmer for another 5 minutes.

  • Turn the heat off, sweeten to taste and strain into the mugs.

Notes

  • If you are making this chamomile chai for people with different preferences for sweetness, you can add the sugar (or sweetener) directly to each person's mug after straining the tea.
  • This recipe works well with almost any type of sweetener (regular sugar, brown sugar, maple syrup…), but one of my personal favorites is using homemade vanilla infused honey; it adds a delicious touch!
