Use a knife to cut the nutmeg into small pieces. Combine the nutmeg with the roughly broken cinnamon, cardamom pods, and cloves in a pan. Roast the mixture over medium heat for a couple of minutes until you notice a delightful aroma of roasted spices.
Roughly crush the spices using a mortar and pestle. As and alternative, you can also use a food processor.
Place the spices and water in a saucepan and bring them to a simmer over medium heat. While heating, grate the peeled ginger into the water.Allow the mixture to simmer for around 5 minutes.
Add the chamomile tea and continue simmering for another 5 minutes.
Then add the milk and let simmer for another 5 minutes.
Turn the heat off, sweeten to taste and strain into the mugs.
Notes
If you are making this chamomile chai for people with different preferences for sweetness, you can add the sugar (or sweetener) directly to each person's mug after straining the tea.
This recipe works well with almost any type of sweetener (regular sugar, brown sugar, maple syrup…), but one of my personal favorites is using homemade vanilla infused honey; it adds a delicious touch!
