Place a vanilla bean flat side down and cut it lengthwise so you can open it and get to the inner pulp. Scrape carefully the seeds with a knife’s backside.
Gather the scrapped pods and vanilla seeds in a clean and dry container. Cover with the honey.
Put an airtight lid and (ideally) let sit for about a week before using. Keep in a dry and cool spot, better if dark.
Notes
After using the honey up, you can re-use the remaining vanilla pod to flavor drinks and desserts that use liquids, like pudding.
