In this post I’ll show you 4 different recipes to make gazpacho for one person.

What is gazpacho?
Gazpacho is a cold soup made from fresh summer veggies.
Original to South Spain (where I come from), it’s often served in a glass so you can drink it.
Gazpacho is refreshing and satisfying – perfect on its own or with some garnish like croutons.
So, it’s ideal if you’re looking for a light lunch, dinner or a satiating snack for yourself.
Just throw in a couple of veggies, blend and enjoy your fresh gazpacho!

You’ll only need some fresh veggies (fresh tomatoes, cucumber, green pepper and garlic), sherry vinegar and extra virgin olive oil along with salt for seasoning and a blender.
Yes! Gazpacho is a flexible dish, so you can actually get creative.
If you want to take the safe road, just switch some of the tomatoes for some sort of summer fruit, like watermelon, strawberries or cherries.
Bellow I’ll show exactly how much fruit I use for the most popular gazpacho variations with fruit.
You won’t be able to pinpoint what fruit it is, but you will love the flavor.
You don’t have to strain gazpacho and I’ve never done it; too much work and in my opinion, a waste of good fibers!
However, I peel the cucumber to make it easier to digest. And the garlic clove needs peeling.
The trick to get a smooth gazpacho (if you like it creamy like me; some people prefer it chunky) lies in blending thoughtfully.
To make a big batch of this chilled soup, it’s better to use a big, strong blender: it saves lots of time and it gets the smoothest gazpacho.
But when making just one serving, even an electric hand mixer will do an acceptable job breaking down chunks into a quite smooth texture (btw., did you know gazpacho was originally made with mortar and pestle?).
How to make a single serving of gazpacho

Gazpacho for 1 person
Equipment
- Blender or hand mixer
Ingredients
- 3 tomatoes (250 gr./half pound.)
- 1 inch cucumber (20 gr./0,7 oz.)
- green pepper (10 gr./0,3 oz.)
- 1/2 clove garlic, peeled (or a small clove)
- 1 teaspoon white wine vinegar
- 2 tablespoon extra virgin olive oil
- a pinch of salt
Instructions
- Peel the garlic and remove the inner germ.
- Seed the cucumber (if needed) and peel it (optional but recommended). Wash and chop the vegetables.
- (Optional, but can take your gazpacho to a higher level) Marinate the veggies with salt and vinegar for 2-24 hours in the fridge.
- Blend everything together.
- Serve cool, but without ice.
Notes
- If you prefer to eat your cold soup with a spoon instead of drinking it, add 1/4 slice of stale bread to the blend

Cherry gazpacho recipe for one serving
This is an amazing refreshing dish with a slightly sweet flavor.
You can make it with fresh or frozen cherries.
If you use frozen ones, you don’t have to chill the mixture before serving it because the cherries cool your gazpacho soup.
Just follow the same steps than when making regular gazpacho, just switching some of the ripe tomato for pitted cherries.
The only difference between the regular one and fruit variations like this one is that instead of green bell pepper, red pepper will work well too.
These are the measurements I recommend for a serving of cherry gazpacho:
- 2 middle-sized roma tomatoes or 1 heirloom tomato – 160 gr. or 5-6 oz.
- A handful pitted cherries – 60 gr. or 2 oz.
- Red bell pepper – 30 gr. or 1 oz.
- Cucumber – 30 gr. or 1 oz.
- 1/2 garlic clove or a very small one
- Wine vinegar- 1 teaspoon
- A pinch of salt
- Extra virgin olive oil – 2 teaspoons
Watermelon gazpacho recipe for one serving
Juicy and sweet, watermelon is also a perfect fruit to add to gazpacho: it adds freshness and it’s very easy to blend with the other ingredients.
To make this invigorating soup, blend some cubes of seedless watermelon (after removing the rind) with the other chopped ingredients.

- 2 middle sized tomatoes – roughly 150 gr. or 5 oz.
- Watermelon without rind – 70 gr. or 2,5 oz.
- Cucumber – 30 gr. or 1 oz.
- Red bell pepper – 30 gr. or 1 oz.
- 1/2 garlic clove or a very small one
- Wine vinegar- 1 teaspoon
- Some salt
- Extra virgin olive oil – 2 teaspoons
I like my watermelon gazpacho quite sweet; if you’d prefer it to taste more traditional, try adding less watermelon and more tomatoes.
Also, a touch of red onion will make this recipe pop!
Strawberry gazpacho recipe for one serving
I can’t decide my favorite type of gazpacho; every single variation is simply too good. Gazpacho with fruits are very mild and this strawberry variant is no exception.
As with other types of this refreshing dish, you just have to blend everything together and serve chilled.
Just remove the green leafy part (the stem) from your strawberry before blending all ingredients together.
Frozen strawberries also work great.
But no matter whether you use fresh or frozen ones, don’t use too many strawberries: we don’t want our gazpacho taste like a salty fruit smoothie!
For a glass of this summer day dream I recommend:
- 3-4 tomatoes, depending in their size – 170 gr. or 6 oz.
- 3-4 strawberries – 30 gr. or 3 oz.
- Cucumber – 50 gr. or 1,7 oz.
- Pepper – 30 gr. or 1 oz.
- 1/2 garlic clove or a small one
- Wine vinegar- 1 teaspoon
- Salt to taste
- Extra virgin olive oil – 2 teaspoons

Thank you! The topping is cheese. Cherry gazpacho pairs very well with goat cheese, but I just had feta so I used it instead.
