It was “invented” back in 2003 and at first it was just a coffee drink with pumpkin pie spices. They added pumpkin syrup to it for the first time in 2015.

PSL gained quite a big popularity from the beginning, and now is one of the most sold seasonal drinks ever.
There is a craze every year about when Pumpkin Spice Latte becomes available again.

You can now also choose whether you want your pumpkin spice coffee warm, as an iced pumpkin spice latte or even as a Frapuccino.

According to this site, Starbucks Pumpkin Spice Latte is currently made by assembling pumpkin sauce (a pumpkin pie syrup that combines pumpkin flavor, cinnamon, nutmeg, cloves and ginger) espresso and frothed milk.
It’s usually topped with whipped cream and some pumpkin pie spice.

How to make pumpkin spice latte without coffee

If you don’t drink any coffee, you can order coffee-free PSL at Starbucks.
PLS without coffee has in fact its own name: Pumpkin Spice Creme, and when you order it, you’ll get an orange colored milk drink like this one:

However, some people may find this option too sweet because there’s no coffee to balance out all the sugar of the pumpkin spice syrup they use.
For a deliciously milky, pumpkin drink without any coffee, I recommend to make this homemade pumpkin latte instead.

If you want a caffeine-free PSL with coffee taste, you can order pumpkin spice latte with decaf.
But I have an even better tip: make your own tailored version at home with coffee substitutes like barley or chicory.
Caffeine free coffee alternatives like Cafix or Dandy Blend work great substituting espresso in PSL.
To recreate a strong coffee with chicory, you’ll just have to stir about 2 teaspoons chicory in half cup of water.

If you drink this concentrated “fake coffee” as is, you’ll note the difference to brewed coffee, but in a pumpkin spices latte, it tastes like the original! (special thanks to my husband, that patiently volunteered as tester until we came to the exact amount of chicory needed).

For another kid-friendly and delicious recipe of pumpkin spice latte, you can swap coffee for cocoa powder. Chocolate matches surprisingly good with pumpkin!

And making pumpkin spice cocoa it’s even easier than making regular PSL because you can skip the step of making coffee: all we have to do is mix some cacao powder to the blend.

For a specially decadent hot chocolate, you can also melt some chocolate to the mixture.

We use pure (unsweetened) cacao powder here, but sweetened cocoa drink powders also work fine.

Just note that chocolate drink powders taste less intense than pure cocoa, so you’ll may need to add more for a nice flavor. 
At the same time, you may need less sweetener (or skip it altogether), since these soluble powders are already sweetened.
